A sweet treat for breakfast? Yes, please!

By now you probably know that I am all about making healthy eating simply delicious, and these muffins do just that! I love starting my mornings off on the right foot and having this recipe done and ready is perfect for when I am on the go! In fact, if you bake the whole batch in advance, you will have a dozen breakfasts prepped for future mornings. Sounds sweet, right?

Let’s dig into the ingredients. This recipe calls for coconut oil, honey and almond milk, making it super clean and full of healthy fats for energy. There is also an option to include the Vital Proteins Vanilla Coconut Collagen Peptides for a little collagen boost in the AM! I don’t know about you, but I love packing my breakfast with healthy ingredients and this recipe does it perfectly!

Vanilla Coconut Muffins

Prep Time 10 mins
Cook Time 25 mins
Course Breakfast
Servings 12 muffins

Ingredients
  

  • 1 egg
  • 1 cup vanilla almond milk
  • cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • 1 ½ cup oat flour
  • 1 tbsp baking powder
  • 2 scoops Vital Proteins Vanilla Coconut Collagen (or an extra tbsp of vanilla and 2 tbsp oat flour)
  • ¼ t salt
  • Coconut shreds for topping

Instructions
 

  • Preheat the oven to 400°F
  • Mix all of the wet ingredients for the muffins in a mixing bowl until smooth
  • Add the dry ingredients for the muffins to the bowl and mix until well combined
  • Pour the mixture evenly into a greased muffin pan (muffin liners optional)
  • Top each muffin with desired amount of coconut shreds
  • Bake the muffins for 25 minutes in the oven
  • Let the muffins cool for 5-10 minutes and enjoy!
