As the weather warms up and we watch the seasons change, a whole new level of inspiration hits our kitchens. Spring-time calls for all the fresh fruit and this season-inspired dessert was made with that berry much in mind. This Coconut Cheesecake Fruit Tart is filled with 3 amazing layers, each even better than the next. 

We start with a graham cracker-coconut crust, add a coconut-cheesecake filling and top it all off with varying seasonal berries for the perfect flavor combination. In addition to the flavors, the sweet, chewy crust has the perfect texture for the fluffy cheesecake filling. Wondering what gives this treat that sweet coconut taste? On top of the anticipated coconut shreds, I added the Vital Proteins Coconut Collagen Creamer to the filling to boost the flavor while adding a ton of health benefits you won’t find in your average fruit tart!

Ingredients
  

Crust Ingredients:

  • 8 gluten-free graham crackers
  • 1/2 cup almond flour
  • 1/4 cup coconut oil
  • 1/3 cup honey
  • 2 tbsp coconut shreds

Filling Ingredients:

  • 1 container dairy-free cream cheese 8 oz total
  • 1/4 cup + 2 tbsp of powdered monk fruit sweetener or powdered sugar
  • 3 scoops Vital Proteins Coconut Collagen Creamer
  • 1/4 cup almond flour
  • 1/2 cup coconut shreds

Toppings:

  • fresh berries

Instructions
 

  • Blend the dry crust ingredients in a food processor.
  • Once the ingredients form a crumb-like consistency, add the remaining ingredients and mix until combined.
  • Pour the mixture into your pie pan and press to cover the entire surface (including edges).
  • Refrigerate the crust while you make the filling.
  • To make the filling, add all filling ingredients to the food-processor and mix.
  • Pour the fluffy mixture into the crust mold and spread to fill the surface.
  • Slice your fruit/berries of choice and cover the entire tart.
  • Refrigerate for one hour and enjoy!
